Friday Food Lust - Chewy Chocolate Chip Cookies

I have long been in search of the ultimate cookie recipe and, until now, I failed. But after a little bit of nipping and tucking, I've found the pinnacle of cookie perfection - and these are to die for, just trust me on that!

To me, cookies should be just like the fresh-baked ones you buy in the shops - deliciously chewy, perfect for dunking and, basically, the size of your face. Yet most of the cookie recipes I tried out left me with hard, Maryland-style cookies. The kind I absolutely didn't want.

I think it's the use of brown sugar which make these cookies so gorgeous and chewy, but they really and truly tick all of those boxes. If you make these, they won't last for long...

Chewy Chocolate Chip Cookies
(Makes 10 cookies)

Ingredients:

250g plain flour
1/2 tsp bicarb
1/2 tsp salt
170g unsalted butter
1/2 tbsp good quality vanilla extract
200g dark brown soft sugar
100g caster sugar
1 egg
1 egg yolk
350g chocolate chips (or other fillings - fudge chunks or white chocolate and raspberry works well!)

Method:

1) Preheat the oven to 170C and grease and line a couple of baking trays.

2) Sift together the flour, bicarb and salt, then set aside. Wander off to have a cup of coffee and pop on your favourite TV show...

3) When you're back, melt the butter in a pan and then beat it together with both of the sugars until it is well combined.  Add the vanilla, egg and egg yolk and beat once more until light and creamy. It helps if you imagine you're pummelling someone you really and truly don't like...

4) Stir in the sifted ingredients until they are just blended, then add in the chocolate chips and give a gentle mix.

5) Leaving a large space in between each cookie, dollop the dough onto the prepared baking trays (a heaped tablespoon for each cookie) and flatten ever so slightly. Bake in the oven until they are golden (this usually takes around 12-15 minutes).

6) Cool on the baking trays, then serve them up with a vat of tea and DEVOUR! Eat as many as you can, then maybe (just maybe) think of sharing them around...
