Saintly Tuesdays - Homemade Cinnamon Nut Granola


I love homemade granola. It is one of my weekly, store cupboard staples.

Every Sunday morning, I lock myself away in the kitchen, dig out all manner of ingredients and make up huge batches ready for the week ahead. I then pack hubby off with a tub of greek yoghurt, mixed berries and granola each and every single morning. And then sneak some myself...

For ages, I was addicted to this Coconut Crunch Granola. In fact, my Dad actually makes me whip him up a tub every few weeks - it beats any shop-bought version, hands-down.

However, my new favourite is this Cinnamon Nut Granola. Packed with seeds, nuts, oats and coconut oil, then sweetened with dates, this is a brilliantly filling, healthy way to start the day.

CINNAMON NUT GRANOLA

Cinnamon Nut Homemade Granola


Ingredients:
(Serves 6)

120g dried, chopped dates, soaked in hot water
250g oats
4 tbsp honey
2 tbsp Meridian natural nut butter (any kind)
200g mixed nuts (I used almonds, cashews and walnuts)
3 tbsp mixed seeds
6 tbsp Lucy Bee coconut oil, melted
1/2 tsp cinnamon

Method:

1) Preheat the oven to 160C, then puree the dates until semi-smooth. Tip all the ingredients into a bowl, then stir the pureed dates through. 

2) Spread onto a lined baking tray, then bake for 15 minutes Reduce the oven to 110C, then bake for a further 30 minutes. Leave to cool then transfer to a container and serve with greek yoghurt.
