Just the other week, the whole of my little family was struck down by a nasty bug. For pretty much two weeks solid, we were snuggled under the duvet, unable to muster the energy to move or even leave the house.
To say that I was going stir crazy was an understatement - those of you who know me will know just how hard I find it to rest, let alone sit still! So, once I had turned the corner, I set to getting everyone else better the only way I know how: COOKING.
Since we were all craving comfort food, I decided to make my own version of chicken soup. Like traditional recipes, it is packed with plenty of veggies and noodles, but with my own personal twist - I added lots of flavour stemming from lemongrass and ginger, and just a touch of spice.
Anyway, it was so good that I just had to share the recipe with you...not only is it perfect for poorly days, but it's also delicious enough to eat however you are feeling!

P.S I make my own vegetable stock, but I'd imagine it would work with shop-bought too!
Ingredients
(Serves 6)
For the stock:
2 carrots, diced
2 onions, diced
2 celery sticks, diced
1 potato, diced
4 bay leaves
1/2 cauliflower, chopped
2 tbsp soy sauce
3 garlic cloves, crushed
8 cups water
Salt and pepper
For the soup:
1-2 large chicken breasts
3 stalks lemongrass
Ginger, to taste (I used the cheat's version, in the tube, and add about 3 tbsps. But I LOVE ginger!)
1 garlic clove
2 tbsp sweetcorn
2 spring onions, chopped
3 mushrooms, chopped
2 tsp soy sauce
1 pack ready-to-wok noodles
Red chilli, chopped, to serve
Method:
1) To make the stock, add all of the ingredients to a large pan, bring to the boil and simmer for at least an hour. Season to taste.
2) Once the stock is done, add the chicken, lemongrass, ginger and garlic. Bring back to the boil, then simmer partially covered for 20 minutes.
3) Take the chicken out, shred it with a knife, then throw it back in to the pan. Stir in the noodles, onions, mushrooms and soy sauce and simmer for 3-4 minutes until noodles are tender.
4) Serve with a scattering of chilli and enjoy!
