Healthy Dark Chocolate Peanut Butter Truffles


There's no point in even mentioning just how utterly obsessed I am with peanut butter. You all know because I'm forever banging on about the stuff (sorry non-nut lovers).

While I'm perfectly content with just a jar and a spoon, I like to mix it up every now and again with these Healthy Dark Chocolate Peanut Butter Truffles. They taste like scrumptiously naughty treats, but thankfully, there's not a bad ingredient among them...

HURRAH! What better than guilt-free PB and chocolate?

The only downside to these is that you WILL eat every last one. Restraining yourself and enjoying 'everything in moderation' is not an option here. But, hey, why not indulge for once? Go one, you deserve it!

HEALTHY DARK CHOCOLATE PEANUT BUTTER TRUFFLES

Ingredients:
250g natural smooth peanut butter
4 tbsp honey
3 tbsp coconut flour
Large handful raisins or dark chocolate chips
300g dark chocolate, to cover (I use at least 85% cocoa solids)

Method:

1) Mix together the peanut butter and honey, then stir in the coconut flour (if you find your mixture is too dry, add a splash of almond milk or a little more sweetener. Too sticky, and add in more coconut flour). Once mixed together, add in your raisins or chocolate chips and roll into balls.

2) Meanwhile, melt your dark chocolate, then dunk each ball into chocolate to coat. Leave to cool and dry on a tray lined with baking paper, then tuck in and enjoy!
