I don't know about you, but I find that there's nothing quite so comforting as snuggling up on a winter's evening with a creamy hot chocolate.
I mean, really, what beats it?
Although I'm all for going mad and indulging every now and again (I once enjoyed a hot chocolate at The Waterside Inn which was so good that I would quite happily get fat for it), this Healthy, Dairy-Free Hot Chocolate is a great weekday option.
Combining creamy coconut milk, nut butter and darkly decadent cocoa, it tastes every bit as good as it sounds - but without any of the guilt. I like to experiment with mine and add different spices to taste, but really, the world is your oyster. Have a go and see what you fancy!
HEALTHY, DAIRY-FREE HOT CHOCOLATE
1/2 can coconut milk
1/2 cup almond milk
3 tbsp cocoa
2 tbsp natural peanut butter (or almond butter)
1 tsp Naturya maca powder (optional)
1 tsp mixed spice
Maple syrup or honey, to taste
Pinch white pepper
1) Tip all of the ingredients (apart from the maple syrup) into a saucepan and whisk, whisk, whisk. Bring to a gentle boil, then simmer, whisking to ensure it's clump-free. Add the maple syrup to taste, then stir. Pour into a mug and enjoy.
