Saintly Tuesdays - Dark Chocolate and Coconut Crisp Bars

I know that everyone loves to indulge over Christmas, but you just have to draw the line somewhere, right? I mean, there's only so many mince pies and tins of Panettone you can take.

These Dark Chocolate and Coconut Crisp Bars are for days you feel like being a little bit naughty, slightly decadent, but with none of the guilt. Chocolatey, sweet and incredibly moreish, they'll please even the most sweet-toothed among you without leaving your waistline bulging and your Christmas jumper hiding too many rolls.

Containing coconut oil, oats, raw cocoa powder, maple syrup and brown rice cereal, these little bars are all treat and no trick and the perfect healthy snack recipe. When everyone else is moaning about piling on the Christmas pounds, make these and feel smug.

healthy snack ideas

1/2 cup coconut oil, melted
1 tsp vanilla
3 tbsp cocoa powder
4 tbsp maple syrup or other liquid sweetener
1 cup oats
1/2 c puffed rice cereal
Large handful raisins


1) Line a loaf tin with baking paper or foil. Mix together all of the ingredients, except for the oats and rice cereal. Once combined, stir in the cereal and oats until well mixed. 

2) Tip into the loaf tin, then press down. Place to set in the freezer, then cut into bars and store in the fridge until ready to eat.
